Time is precious, and food is pricy. So instead of tossing the remainder of the dinner you worked so hard to make, turn it into lunch. With a little ingenuity, you can reinvent last night’s leftovers as delicious, nutritious, and—most important—kid-friendly lunchbox treats today.

Dinner #1: Roast Chicken

Everybody loves chicken. Whether you rinsed, rubbed, and roasted the bird yourself or simply plucked a rotisserie chicken from your local supermarket, pull off the leftover meat and use it to whip up pita sandwiches or quesadillas.

Fruity Chicken Salad Pita Sandwiches

The classic chicken salad sandwich calls for three simple ingredients: mayonnaise, two slices of bread, and, of course, chicken. Fruit adds a fun twist to this basic recipe. You’ll need:
  • 1/2 cup chopped or shredded leftover roast chicken
  • 2 Tbsp mayonnaise
  • 1/4 Golden Delicious apple, peeled, cored, and diced
  • 1/4 cup chopped seedless grapes
  • 1/4 cup dried cranberries
  • 1 six-inch whole wheat pita, halved
  • 1 stalk of celery, chopped (optional)
  • Salt and pepper to taste
In a large bowl, combine all ingredients. Mix well. Stuff half of the mixture into each pita half.

Chicken Quesadillas

A microwave is the only tool you need to turn leftover chicken into a south-of-the-border lunchbox sensation. You’ll need these ingredients:
  • 1/2 cup chopped or shredded leftover roast chicken
  • 1/4 cup grated Monterey Jack cheese
  • 1/4 cup chopped green peppers
  • 1 Tbsp mild salsa
  • 1 Tbsp sour cream (or substitute with low-fat yogurt)
  • 2 six-inch tortillas
Spread dry ingredients evenly on tortillas. Top with salsa and sour cream (or yogurt). Fold each tortilla in half and place on a microwave-safe plate. Microwave on high until cheese melts (about 20 seconds).
