How to Buy Oysters
You can buy oysters unshelled (still in their shells) or shelled (removed from their shells).
How to Buy Unshelled Oysters
Unshelled oysters are usually sold by the dozen or the crate. Only buy unshelled oysters that are still alive and full of water.
- Live oysters are usually closed, and if slightly open, will close when tapped.
- Oysters that are filled with water are relatively heavy.
How to Buy Shelled Oysters
Shelled oysters are sold by the pound, either fresh or frozen. They’re more expensive than unshelled oysters, but none of the flesh is wasted. Shelled fresh oysters should:
- Have flesh that is firm and shiny
- Be stored in liquid that’s clear, not milky
