The quality of a pineapple depends largely on the moment of harvest—pineapples should be picked at peak ripeness, as their sugar content does not increase once they are harvested. To choose a ripe pineapple, keep these tips in mind:
- Size: Look for a heavy pineapple, ideally one over five pounds.
- Leaves: The pineapple’s leaves should be deep green, not light or mottled. Darkened “eyes,” soft spots, and yellowing leaves also signal a lack of freshness.
- Skin: A pineapple’s skin should yield to a slight pressure of the fingers. Avoid pineapples with spots, mold, or sodden skin. Tap the pineapple’s skin lightly with the palm of your hand and listen—a muffled sound is a sign of ripeness, while a hollow sound is an indication that the fruit may be dried out.
- Odor: An overly strong odor may indicate that the fruit has begun to ferment.
