Pineapple supplies vitamin C, potassium, magnesium, and folic acid. It is said to make a good diuretic, stomachic, and detoxicant. Like the kiwi, the pineapple contains bromelin, an
enzyme with meat-tenderizing properties. Bromelin also keeps gelatin from setting, turns milk sour (although it has no effect on yogurt or ice cream), and softens the other fruits in a fruit salad (unless added at the last minute). Since these properties are neutralized by cooking, canned pineapple may be used freely with gelatin or in fruit salads.
